Skillet Tacos



Skillet Tacos
1 lb. ground beef
1 pkg. taco seasoning
2 cups water
1 jar 16 oz. thick & chunky salsa
1 can Mexican style corn
1 can of ranch style beans
2 cups instant brown rice
1 c. shredded Mexican or taco cheese blend
2 cups shredded lettuce
1 lg. tomato chopped
sour cream
Optional: Black chopped olives, guacamole
Brown meat in LARGE non-stick skillet with a lid (or electric skillet) Stir in taco seasoning, 2 c. water, and salsa.  Bring to a boil. Stir in rice. Cover and remove from heat. Let stand 10-15 min. until liquid is absorbed. (I find it sometimes takes longer than 15 min. for the rice to get done---also add more liquid if needed) When it is done, stir in can of ranch style beans and can of mexican corn. Cover the mixture with Mex. shredded cheese and cover again until cheese is melted.
Serve over or with  tortilla chips........top with lettuce , tomatoes, more grated cheese, dab of sour cream and if desired the black olives and guacamole..
I would 1/2 this recipe if making it for 2-3 people. It makes a huge amount.
